What is avocado oil

Avocado oil is an edible oil pressed from the fruit of the Persea americana (Avocado). 

Is a food oil, so it is used as an ingredient in dishes, and as a cooking oil, but it has many other uses in other fields thanks to the healthy, regenerative and moisturizing properties.

This vegetable oil has an unusually high smoke point,which means it can be used to cook at higher heat and is great for stir-frys. If you heat oil past its smoke point, it not only harms the flavor, but many of the nutrients in the oil degrade and the oil will release harmful compounds called free radicals. 

For Avocado Oil we are talking about temperatures around 250 °C (482 °F) for unrefined oil (chemically untreated) and 271 °C (520 °F) for refined oil (chemically treated to make it edible), but the exact smoke point depends heavily on the processing method.
